Quick and easy bacon pasta? Yes please.

Hello there, I greet you all from my trusty computer, sat in the library at 1030am on a Saturday morning! This is one of the joys of being a masters student – although, sadly i can assure you I am not feeling oh so jovial looking out of the window at the glorious sunshine that i should be enjoying with my fellow peglets 😦

Anyhoo – back to my blog – today the focus is on easy food. I am one of the last remaining peglets studying at university, so my time is spent trying to whip up quick and easy food that doesnt look like this:

Who would have thought?..isnt a doner kebab alone bad enough?

So i make compromises. The recipe i wish to share with you today is one that i cooked last night, and have a bowl in view right now ready to munch on for my ‘much deserved’ lunch break (oh living the high life yes indeed).

Ingredients needed: 8 rashers of smoked streaky bacon; tin of chopped tomatoes; 2-3 cloves of garlic; 1 whole red chilli deseeded; 1 large onion; red wine vinegar; worcester sauce; penne pasta; parmesan cheese

  • Cut the bacon into small strips – fry in a splash of olive oil until crispy.
  • Remove bacon from the pan with a slotted spoon (so you dont remove the fat)
  • Keep the bacon fat hot in the pan and add the diced onion, chopped up garlic and chilli
  • Cook on a medium light until the onion is softened
  • Add in the tin of chopped tomatoe, splash of red wine vinegar and dollap of worcester sauce.
  • Season to your liking
  • Cook on a low heat for about 15-20 minutes – then add the bacon pieces back into the sauce.
  • Boil your pasta
  • FINITO – serve with a nice scattering of parmesan and you have yourself a nice hearty, quick and easy meal – fit for a king….or maybe a student?
